With our easy-to-follow recipe for turkey curry, you can whip up a wonderful pan of leftover turkey curry in no time at all. This recipe makes use of all the roast dinner leftovers.

This is a brilliant curry recipe! You can use it to make turkey or leftover chicken curry and you can even throw in leftover vegetables and roast potatoes.

Making it the ultimate leftover turkey curry! And a great recipe for all that leftover Christmas turkey!

You can serve your leftover turkey curry with boiled rice, naan breads, poppadoms and some lovely Indian dips. Just add any of your favourite Indian side dishes.

Leftover Turkey Curry Ingredients

You’ll only need a handful of ingredients to make our delicious turkey curry, and you can swap and change the added vegetables depending on what you have to use up!

Cooks Note! Okay, so first up, remember when you’re making a new meal from leftovers, you really don’t need to be precise with the ingredients quantities. Just add in what you have and bulk it out where necessary if you’re short on leftovers.

  • 1 tbsp sunflower oil – you can use rapeseed oil or butter if you prefer
  • 1 onion – peeled and diced
  • 1 clove garlic – grated, or use lazy garlic from a jar
  • thumb sized piece of ginger – peeled and grated. Or you can use lazy ginger from a jar.
  • 2 peppers – diced
  • 600g passata or canned chopped tomatoes
  • 350g leftover cooked turkey – shredded – if you don’t have that much, just add in what you have and you can use canned chickpeas or lentils to bulk up the leftover turkey curry if needed.
  • 4 handfuls of leftover vegetables – any mix of sprouts, carrots, parsnips, roast or boiled potatoes, peas, swede. Just use whatever leftovers need using up. Again, you can always add canned pulses if you need to bulk up the curry.
  • Pinch salt and black pepper

How To Make Leftover Turkey Curry

You are just going to LOVE how simple our delicious easy turkey curry is to make!

Step One Fry the onions and peppers

  • Put the pan over a medium heat and tip in the sunflower oil.
  • Fry the onions and peppers for 5 minutes, stir often, until they start to soften.

Step Two – make the curry base sauce

  • Squeeze in the curry paste and add the grated garlic and ginger. Mix everything together and fry for around a minute.
  • Then tip in the tomato passata, season with salt and black pepper and bring to the boil.

Step Three – add the leftover turkey and vegetables

  • Add the shredded leftover roast turkey and any leftover vegetables to the curry sauce.
  • Bring the curry back to the boil and then pop the lid on, reduce the heat and simmer for around 20 – 30 minutes or until the turkey and vegetable leftovers are thoroughly reheated throughout and are piping hot.

Step Four – serve the Leftover Turkey Curry

  • Serve the leftover turkey curry with boiled rice, naan breads and popadoms and add in any side dishes you like.
